This highly textural, peppery herbaceous salt is infused with a complex mix of fall’s most robust herbs, centered on piney and earthy bits of rosemary nestled in a warm, comforting foundation of sage. Peppery savory, green garlic, and juniper add zing, while marjoram infuses a delicate sweetness that balances the stronger flavors. Floral undertones of lavender leaves and flowers introduce an intriguing aromatic dimension. Oniony and exotic warmth make subtle and swift appearances when rose harissa crispy shallots are pulverized into the mix. Blocks of minced chives and big parsley flakes contribute a light, grassy flavor that offers freshness. All this is the lead up to the main peppery kick from black, red, and green peppercorns crunched into lemon zest and more rosemary.
