This salt is an ode to my old fishing village, Bolinas, and the way Gospel Flatā€™s farmstand brightens winter with its unparalleled fresh, seasonal bounty. This herbaceous salt captures the essence of Bolinas, doing for your food what twinkling lights do for your Christmas treeā€”illuminating the darkest winter days with vibrant cheer. Itā€™s a lively blend of crisp parsley and earthy winter celery leaf, enhanced by the zesty punch of wild arugula and the bittersweet bite of red-veined sorrel. Meyer lemons, both fresh and preserved, add floral perfume and layered sour complexity, while pomelo zest delivers gentle bitterness and tartness.
