This is a celebration of the 24/7 Bolinas farmstand that is Gospel Flats Farm. The flavor, like the celebrated farm stand, is not just insanely fresh, but totally quirky. It starts with smoky, wood-fired, honey-roasted carrots spiced in a plethora of warm summer spices. Loads of Mickey’s extra-green, potent mint, basil, dill, and parsley are the herbaceous backbone. Deeper, earthier, sultry herbs commingle with the smoke of the carrot, but only subtly. A new obsession with lamb’s ear lettuce merges in extra grassy freshness so it easily reads fresh, fresh, while pops of peppery and mustardy sweet anise excite the tongue. This is smoky, vegetal, bright, sweet, and green, and it’s just as special as a place that sells its wares under the honor system. Great on summery white beans, black caviar lentils, chickpeas, and obviously grilled carrot salad. It makes a good summer carb salt too — potatoes, pasta and rice. I’m toying with the idea of refried roasted carrots and white beans.
