This one pairs two of summer’s most quintessential offerings in a flavor combo that blows minds — sweet, ripe peaches and peak-flavor heirloom tomatoes. A divine peach-tomato nectar made with a splash of white balsamic and Bolinas olive oil drenches the flake salt only to be intermingled with a bevy of fresh, bright summer herbs from Bolinas. Loads and loads of flowers from Healdsburg & foraged from the big mesa are tossed in -flavors ranging from sweet to peppery to bitter to perfumy. A little cucamelon makes this cute and fun. Potent in herbs, but not enough to take away from the simplicity of the tomato-peach flavor. Subtle accents of spice and pepper come through — Zanzibar and pink peppercorn, sumac, a whisper of Cobanero chili flake — grounded by shallot and purple striped garlic. Yuzu and lemon zest keep enough brightness to it. Texturally soft, a little perfumy and piquant, and totally extra. Wow. Great on Greek salad, caprese, shirazi, or green tomato salad — you get the tomato idea. I dream of it on my grilled pork chops with cinnamon basil peach salsa.
