Briny and green at the edges, wild and untamed at the core, with pockets of sweetness that sneak up on you. The Bolinas Seascape Collection is my summer flavor untamed: eight salts and a salty herbaceous confectionery sugar shaped by cool coastal fog, hot sun, wind, wild edges, and the gardens and farms that hold this place together. Mint, basil, dill, parsley, oregano, marjoram, and anise hyssop form a thick, potent green center, while wild fennel, yarrow, and hummingbird sage push everything toward the feral and foraged. Tomatoes, peaches, lemon verbena, and other summer provisions arrive like needed tourists from hotter ground over the hill, bringing sweetness and succulence without redefining what is already rooted here. Anchovies, blue cheese, capers, chilies, peppercorns, citrus, and vinegar add salinity, sharpness, tang, and savory depth. Nothing is manicured. Flavors move between earthy, vegetal, floral, bitter, sweet, salty, and occasionally strange. Like Bolinas itself, the collection is rooted but pliant, abundant, a little weird, and intensely alive—coastal and untamed, shaped by what grows here, what blows in, and what finds its way into the mix.
