Joyous radish sharpness is the point here. French breakfast radishes in several forms — shaved, juiced, pureed, and dried into concentrated flecks — are the architecture behind this herb salt. The radishes are mingled into flaky salt that has been drenched in salted butter lifted with fresh spring horseradish for a broadened heat. The result is a buttery radish salty back drop with sharp concentrated nibs of dried radish throughout, complemented by radish leaves and an abundance of spring anise herbs— chervil, tarragon, fennel fronds. Delicate borage and cilantro flowers get noticed with sharp perfumed edges while onion piquant chive blossoms bring textural potencies. Mint and Syrian oregano bring earthy sweet minty spice and celery leaf cleans and quells the bright, sharper edges. Thick slivers of green onions and peppery spices give vegetal savory depth. Sumac and bitter citrus zests contribute power by balancing. Use this at least once on the namesake — buttered radishes & salt. Perfect as a saline additive to a cocktail. This is my spring steak salt.
